Scheduling from Canvas LMS creates an instance of user account that we don't want to happen EVER again.

We integrated Bluejeans with Canvas so our Professors and appointed Teaching Assistants (TA) can schedule meetings from within canvas. The problem we are having is that even though our TAs don't have bluejeans account, they can actually create and schedule meetings from canvass and with that they are automatically assigned with a new bluejeans account. The recorded meeting will then be saved to the new TAs bluejeans account which we don't have access to.

Is there a way to prevent this happening?

Without checking your exact account setup,  I am guessing you have Single Sign On enabled, with automatic account provisioning checked.  When a new user gets redirected to BlueJeans an account will automatically be created for them in our platform if you have the account creation enabled.

If you disable automatic account provisioning, we will only authenticate preexisting accounts that you have created by hand or imported into the admin portal.

So by disabling automatic account provisioning, someone needs to have a bluejeans account before they can create/schedule a meeting in canvas?

PS.
I just checked our settings and it appears that we have BlueJeans Password Configuration selected and not the SAML Single Sign On thus automatic account provisioning  is not being used.
